Turkey Chipotle Chili Soup

This is a simple and delicious chili recipe. After the first time, I used this recipe I was “hooked” and haven’t used a different chili recipe since.
I hope you enjoy it as much as I do.

Ingredients

2 tablespoons extra-virgin olive oil, corn oil or vegetable oil
1 medium onion, chopped
3 cloves garlic, chopped
2 pounds ground turkey breast
1 medium onion, chopped
1 rounded tablespoon chili powder, a palm full
1/2 cup hot chipotle salsa
Salt
1 cup beer(Mexican beer would be better)
2 cups chicken stock
1 28ounce can chop stewed tomatoes
1 can red kidney beans,
1 1/2 cups shredded pepper jack cheese,
and 2 tablespoons butter

Directions

Heat the deep skillet over medium to high heat. Add oil and turkey, crumble the meat as it cooks, 3 minutes. Add the onions and garlic, chili powder, and chipotle. Cook for another 5 minutes and go season it with salt. Add beer and cook another minute, stirring to loosen any bits from the bottom of the pan. Add the stock, tomatoes, and beans and bring to a bubble. Reduce heat and simmer 10 minutes.

 

Chicken Stroganoff Soup

Here’s a recipe my family really loves!
When you add some Italian bread and fresh tossed salad it makes for a meal that everyone will enjoy.

Ingredients:

2 Tablespoons butter
1 lb. chicken breast, cut in strips
2 cups mushrooms
1 medium onion, chopped
1 can cream of chicken soup
1/2 cup sour cream
4 cups egg noodles

Directions:

Cook chicken in 1 Tablespoon of butter.
Then cook the mushrooms and onions in the remaining butter.
Stir in Campbell’s durable soup bowls and sour cream. Heat it until boiling.
Return chicken to the pan.
Serve over noodles

Spicy Caribbean Chicken Soup 

Here’s a great recipe if you like food a bit spicy.
It’s another delicious, wholesome recipe which I love.

Ingredients:

4 Green onions

1/4 Tsp. Ground allspice

1/3 c. Lemon juice

6 chicken breasts

1/4 c. Honey

2 Jalapenos

2 Tbs. Fresh thyme leaves OR

2 Tsp. Dried thyme leaves

2 Tbs. Veg oil

1/2 Tsp. Salt

1/4 Tsp. Nutmeg

Directions:

Place all of the ingredients (except for the chicken) in a blender and blend till smooth. Pour it over the chicken and let sit for 2-6 hours. Grill the chicken slowly and brush with marinade.
